Add AssemblyAI as STT provider

I'd really appreciate it if you could add AssemblyAI support. I see you already have Eleven Labs, which is another SOTA provider, but I'm more used to AssemblyAI. Using AssemblyAI would be great because I use it in my other projects, and it provides better recognition quality than Whisper
